Vineyard Practices:
The is wine is made from the Aurora Vineyard in the mountains of the Batroun district in North Lebanon grown in terraces made of argillic soil at an altitude of 850 meters. The number of grapes per vine is tightly controlled to keep 10-12 grapes per vine only and the vine trees are entirely covered at maturation by bird nets to avoid bird, wild bees,
and fly spoilage. Aurora Cuvée N is made of pure Sauvignon Blanc with an annual production of only 1200 bottles.
Winemaking and Cellar Practices:
Grape harvest is made by hand, typically the last week of August or first week of September. The goal is to pick at a sugar content and maturity levels that would provide an optimal juice density and preserve the natural acidity and the freshness of the grapes. Grapes are squeeze-crushed and fermented in temperature controlled stainless steel tanks and Sulfite (SO2) is added immediately after primary fermentation is completed to avert malolactic fermentation. The wine is fined, fltered, and bottled approximately 4 months after harvest.
